Turkey Treat Mexican Casserole

Serves 6

 

Ingredients:

  • 1 Teaspoon Olive Oil
  • 1 Pound Ground Turkey
  • 1 Cup Yellow Onion, chopped
  • 2 Garlic Cloves, chopped
  • 8 Ounces Cream Cheese, room temperature
  • 1/4 Cup Sour Cream
  • 1/3 Cup Salsa, Favorite
  • 4 Ounces Diced Green Chiles
  • 1 Cup Cheddar Cheese, Grated
  • 2 Cups White Rice, Cooked
  • 1/2 Teaspoon Red Pepper Flakes, Optional
  • 1/4 Cup Cheddar Cheese, Grated

Instructions:

Brown turkey in olive oil with onions and garlic.  In a large bowl, mix browned turkey with next 6 ingredients.  Place in casserole dish and bake at 350 degrees for 25 minutes.  If using the red pepper flakes, sprinkle the casserole and top with remaining 1/4 cup cheddar cheese and bake an additional 5 minutes.
