Pepper Cheese Squares

  • 1/2 cup Flour
  • 1 t Baking Powder
  • 8 Eggs
  • 3 Cups Monterey Jack Cheese Shredded
  • 1 1/2 Cups Cottage Cheese Cream Style
  • 3 Large Jalapeño Peppers Chopped W/O Seeds
  • 2 T Pimentos Chopped
  • 2 T Ripe Olives Sliced


Shift together flour, baking powder, and 1/2 teaspoon salt: set aside. In a large bowl, beat eggs till well combined. Stir in flour mixture, mix well. Fold in cheeses, peppers, pimiento, and olives. Pour into greased 13X9X2-inch baking dish.

Bake at 350° F oven for 40 minutes or till set and golden brown. Let stand 10 minutes. Cut into 1 1/2-inch squares. Serve warm.
